Moon Walking

Last night was a full moon so we decided to go for another moon walk. We like this idea, and Miss Paradise has them marked on her calendar for the year so we can plan accordingly.

We had a lot of rain yesterday afternoon, but fortunately it had stopped as night fell. We had takeaway fish and chips in the park and then strolled along the water front. We had the good camera with us but no tripod. Mr P used an obliging tree to get this shot. The moon was shy and hid behind the clouds, but they parted ever so slightly for us.

I told her I had, and asked had she miss me?

she said she had, a little.

then she looked at me and said, it is just something we are both going to have to get used to!

First she sewed and now she cooks!

This is turning into a cooking blog! It is not supposed to be, but then we all need to eat and food is a big part of our lives so sometimes that is all that is going on around here!

Miss Paradise is always asking to 'help' when I am in the kitchen. Sometimes it is not really all that helpful, but I try to give her jobs to do. She had been at me to let her "cook dinner" so I took a cheats way out and we had a no cook pasta sauce. First off she used a really sharp knife to half the cherry tomatoes.

Then they were mixed in with some olive oil, crushed garlic and basil.

we put a good handful of baby spinach in the bottom of our serving bowl.

Boiled up some spaghetti,

and toasted some walnuts.

Mixed all but the walnuts together.

And served it with a slight grating of parmesan and a few walnuts in top.

Verdict? Really nice.

(Even better for lunch the next day!)

Quick Anzac Slice

I managed 21 posts last month for my December Daily. That is the most posts in a month I have ever done by one. In April 2008 I did 20. It was during that month that I went to Nundle......... ahhhh the memories.


Well I have had a distinct case of posting burnout, because I have just not been able to come up with anything.


So today, just for you, I made "Quick Anzac Slice".


This recipe appeared in the June 2005 edition of Australian Table.


It is a nice easy one.


Preheat your oven to 180 degrees Celsius. Lightly grease an 18cm x 28cm slice pan.


In a large bowl, combine


1 cup of rolled oats


1 cup brown sugar


3/4 cup desiccated coconut


3/4 cup plain flour


1/2 cup SR flour


(I don't have any SR Flour, so I made up the total of flour with plain flour and added half a teaspn of baking powder)



Heat 125g butter and 2 tblspns golden syrup in a small saucepan on low until melted together.



make a well in the centre of the dry ingredients. Add butter mixture




and combine well.



Press firmly into prepared pan. Use a glass to press down.



*Sprinkle with 1/4 cup shredded coconut (I didn't, I am not a fan of too much coconut)


Bake for 20-25 minutes until golden. Mine took 23mins



Now here is where the recipe tells you to leave it in the pan until it is completely cool.

You should do this!


I didn't.



Cut into squares and serve.


Because everything looks better on a green plate with white polka dots... Ta-dah!!!!!!

January 5

5 days into January already!!

How did that happen?

was anyone really taking notice?

So far January, 2010 has been quite uneventful. The 100% humidity hours have been broken up by lots of rain, and sometimes even cooling breezes.

I went outside tonight to shoot the sunset and how long the grass has grown since New Year and Tess the Wonderdog thought I wanted to play.

She brought over her GREEN kong, that you can't spy in the long grass, and all I wanted to do was snap away, not play!

she voiced her displeasure!!!

Then I won her over, as always!!

It's the first of January.

My December Daily is over. I didn't take ANY photos today. At all. Of ANYTHING!!

Last night, Mr P took this shot. On Miss Paradise's point and shoot camera.

It is not a black and white shot. I love it. I think it is an awesome shot.

Last night we went on a Moon Walk.

Last night it was a Blue Moon.

Last night I learnt what a Blue Moon was.

A Blue Moon is when you have a full moon for the second time in a month. It only happens every couple of years or so, hence the expression "once in a blue moon."

So what is a moon walk?

We met up with some locals, walked around town and then shared a meal down my the Lilly ponds.

We weren't locals, we were just visiting, and we were made very welcome.

We will have to do this more often, in our neighbourhood.
