Quick Anzac Slice

I managed 21 posts last month for my December Daily. That is the most posts in a month I have ever done by one. In April 2008 I did 20. It was during that month that I went to Nundle......... ahhhh the memories.


Well I have had a distinct case of posting burnout, because I have just not been able to come up with anything.


So today, just for you, I made "Quick Anzac Slice".


This recipe appeared in the June 2005 edition of Australian Table.


It is a nice easy one.


Preheat your oven to 180 degrees Celsius. Lightly grease an 18cm x 28cm slice pan.


In a large bowl, combine


1 cup of rolled oats


1 cup brown sugar


3/4 cup desiccated coconut


3/4 cup plain flour


1/2 cup SR flour


(I don't have any SR Flour, so I made up the total of flour with plain flour and added half a teaspn of baking powder)



Heat 125g butter and 2 tblspns golden syrup in a small saucepan on low until melted together.



make a well in the centre of the dry ingredients. Add butter mixture




and combine well.



Press firmly into prepared pan. Use a glass to press down.



*Sprinkle with 1/4 cup shredded coconut (I didn't, I am not a fan of too much coconut)


Bake for 20-25 minutes until golden. Mine took 23mins



Now here is where the recipe tells you to leave it in the pan until it is completely cool.

You should do this!


I didn't.



Cut into squares and serve.


Because everything looks better on a green plate with white polka dots... Ta-dah!!!!!!

Thanks for your comment. What kind of flour is lavash bread made of?

This looks yummy, but coconuts are hard to get up here ;-)
