Pizza Making

Lunch on a housebound dusty day. A perfect holiday activity for little hands. Tastes good too!

ANZAC Biscuits

ANZAC Biscuits are a sweet biscuit made using rolled oats, flour, coconut, sugar, butter, golden syrup, bicarbonate of soda and boiling water. ANZAC biscuits have long been associated with the Australian and New Zealand Army Corps (ANZAC) established in World War 1. The biscuit appears to be a variation of Scottish oat cakes, possibly via the Scottish-influenced city of Dunedin, New Zealand. The ingredients do not spoil easily so the biscuits kept well during naval transportation to loved ones who were fighting abroad. (Information from Wikipedia)

INGREDIENTS
1 cup rolled oats
3/4 cup desiccated coconut
1 cup plain flour
1 cup sugar
125g (4oz) butter
2 tablespoons golden syrup
1/2 teaspoon bicarbonate of soda
1 tablespoon water

Preheat oven to 150C (300F)

Mix oats, flour, sugar and coconut together.
Melt syrup and butter together.
Mix soda with boiling water and add to melted butter and syrup.
Add to dry ingredients.
Place 1 tablespoonfuls of mixture on greased tray (allow room for spreading).
Bake for 20 minutes.
Loosen while warm, cool on trays.
(makes about 35)

Scones

I made my first ever batch of scones yesterday. Very easy to mix together. Here they are ready to go in the oven

Here they are straight out of the oven

And here is one piping hot with jam... yum.

I have never really been a scone fan. Have always thought them a bit dry. These were luscious and moist and mmmmmmm. Might have to make some more today!
